10 Recipes Using a Mandoline

If you are looking for a few quick and easy mandoline recipes to put your new mandoline to use, here is the place to look! The following mandoline recipes provide some basic, easy uses for any style of mandoline. Some of the mandoline recipes below require a specific type of mandoline blade or attachment, but even if you don’t have the particular type of blade described, in most cases any blade will do.

Attractive tossed salad

Of all the mandoline recipes out there, perhaps no mandoline recipe is easier or more versatile than a simple tossed salad. To make this attractive dish, start with your favorite green base (spring mix, romaine lettuce, spinach, etc) and select a variety of vegetables to slice using your mandoline to make an interesting addition to the salad. Cucumbers, carrots, zucchini, and yellow squash look especially nice when cut using a crinkle cut blade but are equally nice with a thin straight cut. Tomatoes cut with ease using a straight cutting blade. Then top with your favorite toppings, such as croutons, dried cranberries, sunflower seeds or almonds and top with your favorite salad dressing.

Carrot salad

One of the easiest mandoline recipes out there – thinly julienne carrots into matchstick size pieces and toss with vinaigrette. Let sit for a few hours so carrots absorb the dressing. Delicious as a side dish in the summer!

Cucumbers in peanut sauce

Thinly slice cucumbers and toss with bottled sesame peanut sauce. Serve chilled.

Cole slaw

Use mandoline to shred cabbage, along with a few carrots. Make a mayonnaise based dressing from 2/3 cup mayonnaise, along with 2 T each vinegar and vegetable oil. Add 2 ½ T sugar and salt to taste. Mix dressing into shredded cabbage and carrots and refrigerate for a few hours for flavors to mix.

Fresh lemonade

Thinly slice 4 lemons and combine in a pitcher with about a quart of water and approx. ¾ cup of sugar. Let sit for about 15 minutes minimum. Sugar can be adjusted to desired sweetness or artificial sweetener can be substituted.

Homemade potato chips

This is one of those mandoline recipes that will make you happy that you have a mandoline! There’s nothing like freshly made potato chips. Thinly slice white potatoes or sweet potatoes using mandoline. Toss slices of potato in olive oil and sprinkle with sea salt and cracked pepper or any desired seasonings. Spread evenly in one layer on cookie sheet and cook at 450 degrees until crisp.

Potatoes Au Gratin

Thinly slice 4 potatoes using a mandoline. Salt and pepper potatoes to taste and place in buttered casserole dish. In a saucepan, melt 3 T butter and then add 3 T flour and about ½ t salt, stirring with a whisk until blended. Add in 2 cups milk and cook until thickened. Then add 1 ½ cups shredded cheddar cheese and stir just until all the cheese is melted. Pour cheese sauce over potatoes, cover the dish and cook at 400 degrees for 1 ½ hours.

Veggie pizza

Use store bought pizza crust (like Boboli) or make your own. Cover crust with pizza sauce and any veggies you wish. Use mandoline to thinly slice veggies (good options are onions, mushrooms, peppers, or anything else you like). Sprinkle with shredded mozzarella cheese and parmesan cheese. Bake according to directions on pizza crust package. (Note: Mandoline is great for slicing pepperoni too if you prefer!)

Zucchini bread

Grate zucchini using mandoline to get about 2 cups of zucchini. Preheat oven to 325 degrees. Mix 3 cups flour, ¾ t salt, 1 t baking soda, 1 t baking powder and 3 t cinnamon together in a bowl. In another larger bowl, combine 3 eggs, 1 cup vegetable oil, 2 cups sugar and 3 t vanilla extract. Once combined, add flour mixture to bowl and combine well. Then stir in shredded zucchini. Add mixture to two loaf pans that have been greased and floured (8 x 4” pans work best) and cook for 45 – 50 minutes. Let pans cool for at least 20 minutes before removing bread from pan.

Chicken fajitas

Slice chicken into bite size pieces. Using mandoline, thinly slice green and red peppers and onions. Place chicken, peppers and onions in Ziploc bag with 1 t chili powder, ½ t cumin, ½ t onion powder, ½ t kosher salt, ¼ t pepper and 1 T oil. Let sit 30 minutes. Heat 2 T oil in sauté pan and add chicken and vege mixture. Cook until chicken is no longer pink and veges are cooked but not too soft. Serve in fresh tortillas with shredded cheese, sour cream, tomatoes, salsa and shredded lettuce (you can use mandoline to shred accompaniments, too!)

The above ten mandoline recipes are a breeze to make using any style of mandoline. In addition to the mandoline recipes outlined above, any recipes that require sliced or cut up vegetables or firm fruits can be considered “mandoline recipes” even though they’re not officially called that, since using a mandoline simply makes slicing, shredding and grating an easier task than using a kitchen knife.
